Zuppa Toscana from a Baltimore MM
Ingredients:
1 16 oz package of hot sausage
1 lb of ground turkey
4 potatoes (cut into cubes)
3/4 cup onion (chopped)
1 each red, green, yellow pepper (chopped)
1 container of low fat bacon bits
1 1/2 tsp of minced garlic
2 cup frozen kale (chopped up)
1 can of chicken stock (fat free)
1-quart water
1 cup of heavy cream
1 envelope of Lipton soup mix (golden onion)
Directions:
Fry sausage and turkey, drain grease, place meat in
a strainer and flush with hot water to get rid of
excess fat. Place the meat back in the frying pan
and add garlic and onions. Fry for about 5 minutes
and set aside.
In a large pot put water, chicken stock, frozen kale
and soup mix. Add heavy cream, potatoes, bacon
bits, and meat mixture. Simmer until potatoes are
done (about 20-30 minutes.) Should have the
consistency of soup. Serve in bowl w/French bread.

Three Bean Chili by MM Kia
Ingredients
2 pounds lean ground beef or turkey (I actually used ground
chicken)
1 small yellow onion, chopped
1 small green pepper, chopped
1 16-ounce can dark red kidney beans (the original recipe called
for two cans of these, but I thought that was too much so I cut
back to one)
2 16-ounce cans pinto beans
2 15-ounce cans black beans
1 14.5-ounce can diced tomatoes
1 6-ounce can tomato paste
2 packages chili seasoning (I used chicken chili seasoning by
McCormick)
1/2 teaspoon cinnamon
Sour cream to garnish if desired (I also garnished with chopped
green onions)
Directions:
In large pan, cook ground meat, onion and green pepper until
meat is browned. Drain excess grease. Add the remaining
ingredients, except sour cream, and bring to boil. Reduce heat to
low, cover and simmer for 20 minutes. Serve warm with
garnish -- sour cream, chopped green onions, shredded cheddar
cheese, etc. Freeze what you don't eat for dinner for lunch
over the weekend! Enjoy!
